  Aflatoxin is extremely toxic

  Aflatoxin is carcinogenic

  How to identify moldy peanuts

  After the peanuts are rotten, there is a layer of black or yellow-brown bacterial spore hyphae on the epidermis. . Peanuts that are mildly moldy are more difficult to identify. The outer skin of such peanuts is brown or yellow, and the fruit is partly yellow or all yellow. There are different degrees of bitterness in the mouth. Normal peanuts are bright in color, light red in color, white in the inside, and slightly sweet in taste. The appearance and smell of high-quality peanuts should be normal.

  Note: Peanut mildew will produce aflatoxin, which is harmful to human body. It is a substance that can easily cause human carcinogenesis. It should be avoided that it is often contaminated with aflatoxin. Since aflatoxin is a metabolite of Aspergillus flavus and Aspergillus parasite, it has strong toxicity and carcinogenicity, and aflatoxin is heat-resistant and has little damage at the temperature of general cooking and processing.
