Eggs cannot be eaten like this

BY Berton Gladstone 2020-05-15

A few days ago, I went to a hot spring mountain village in the far suburbs of Dalian to take a hot spring. I just met a large hospital in Dalian to engage in doctors’ day celebrations. There are about 200 medical staff. When I ate a buffet breakfast with them the next day, I found a phenomenon: a lot of egg yolks were scattered on the dining table-that is, many people only eat egg whites, but not egg yolks.

According to the recommendations of "Chinese Dietary Guidelines 2007" compiled by the Chinese Nutrition Society (this guide was officially issued by the Ministry of Health of China in January 2008 and is currently the most authoritative dietary guideline in China), ordinary adult People eat 25 to 50 grams of eggs per day (equivalent to half or one egg). This is because, although eggs are one of the foods with the closest nutritional content in all foods available to humans, they are rich in extremely balanced proteins, lipids, minerals and vitamins, but eggs (mainly egg yolks) contain more cholesterol (Each egg yolk contains about 260-290 mg cholesterol). Although cholesterol is also a dietary component required by the human body, excessive intake is not conducive to the prevention of cardiovascular and cerebrovascular diseases caused by arteriosclerosis. According to the recommendations of the American Heart Association and the World Health Organization (WHO), ordinary adults should not consume cholesterol daily More than 300 mg. In short, it should be possible for ordinary adults to eat one egg yolk every day, not necessarily only egg whites and not egg yolks.

Of course, the bigger the yolk in a place may be that many people eat one whole egg (egg + egg yolk), and then eat a few egg whites alone (discarded the yolk). In other words, while fearing cholesterol, these people want to get protein by eating a few more egg whites. The composition of egg whites is relatively simple-far less abundant than egg yolk-mainly protein. But in fact, protein is not too good. In daily life, about 6 or 2 grains, a bag of milk, an egg, some soy products, about 2 or 2 meats, plus a pound of vegetables and fruits, it is easy to obtain There is enough protein (60~70g), there is no need to eat a few extra egg whites, especially when eating in the hotel, the protein will not be lacking. Moreover, protein is basically unable to store, it is not beneficial to eat more.

has another problem that has nothing to do with nutrition but is more important: the egg yolk is a huge waste! I believe that when you eat at home, you will not just eat egg white and throw away the egg yolk. Is it possible to eat a buffet in a hotel? It is a sin to waste in the name of nutrition.

By the way, during my participation in the National Nutrition Conference in Beijing last month, breakfast was also self-service. I paid special attention to the dining table and found no phenomenon of "one egg yolk". It seems that this waste It''s not comforting advocated by nutrition practitioners.
