Try to use fresh fish such as mandarin fish or seabass, flounder, bayfish, etc. with less thorns, if the parents have better cooking skills, they can also use black fish, grass carp, bighead carp to scrape clean meat. For clear soup, you can use chicken soup or pork rib soup.

  Making method:

   1. Crush the cleaned meat with fish bones with a household meat grinder or mince with a knife and smash it into fish paste with the back of the knife.

   2. Onion and ginger, 10 grams each, crushed and soaked in water to get 50 grams of juice for use.

   3. Put the pre-treated fish meat in a slightly deeper pot, and gradually add half of the scallion and ginger juice while stirring.

   4. After absorbing the water, the fish meat is put into an egg white, and the fish meat is slowly beaten in the basin so that the egg white is fully absorbed into the fish fiber.

   5. Add the remaining scallion and ginger juice to the fish meat gradually, then add salt and chicken powder and beat until the fish meat is firm and elastic.

   6. Put the processed fish puree in the refrigerator to refrigerate for an hour, so that the taste of the fish balls is the best.

   7. Put the cold soup in the pot, hold the fish paste in the hand and squeeze it out from the tiger’s mouth slowly, and use a small spoon to dig out fish balls of even size and roundness into the soup.
