If the oil smell is normal and everything is normal, it is normal performance. Fats and oils are fatty acid triglycerides. Due to the different lengths of the carbon chains of fatty acids that make up triglycerides, the temperature at which they form crystals is different. The crystals need to be formed in a gradual process, and they will show several different forms. These are normal physical phenomena.
