    It is understood that the formation of polycyclic aromatic hydrocarbons is mainly related to the incomplete combustion of organic matter. At present, there are more than 400 kinds of polycyclic aromatic hydrocarbon compounds found, about 20 of which have carcinogenic effects on experimental animals. Benzo (a) pyrene is the most important and common one. Benzo (a) pyrene in food mainly comes from barbecue food, food processing and packaging pollution.
