Can eating eggplant with skin prevent arteriosclerosis?

I don’t like to eat dishes made with skinned eggplant. It’s dark. My lover says that eating it can prevent arteriosclerosis. Is that true?

    Eggplant has the highest flavonoid content in all vegetables. Flavonoids can enhance the adhesion between human cells, soften the capillary wall, enhance the elasticity of capillaries, prevent microvascular rupture, and have a good effect on hypertension, arteriosclerosis, gingival bleeding and skin purple spots. The place with the highest content of flavonoids in eggplant is the junction of eggplant skin and meat quality.
