Unripe blue tomatoes are not suitable for eating. According to ultraviolet spectrometry, the toxicity of unripe tomatoes and potato sprout roots or green wheat is exactly the same, and they all contain an alkaloid glycoside, solanine. Eating this cyan tomato often feels uncomfortable, especially the mouth will feel bitter. In severe cases, it may also cause poisoning symptoms such as dry mouth, numbness, nausea, vomiting, and diarrhea. When the tomatoes are ripe, the alkaloid glycosides are hydrolyzed by the acid added by the tomatoes themselves, producing tomato hypokaloids and sugar, which is non-toxic and tastes sour and sweet.
