    According to the different protein, starch and moisture content, ham sausage is divided into four levels: special grade, excellent grade, ordinary grade and no starch grade. The starch content of the four grade products is specified as: special grade products ≤6%; superior grade ≤8%; ordinary grade products ≤10%. Among them, starch-free ham sausage does not mean 100% starch-free, but refers to ham sausage with starch content ≤1%, and requires protein content ≥14%. It's not that the more meat the better the ham sausage.
