    When foods containing carbohydrates and amino acids are cooked at high temperatures above 120°C, the color will turn yellow and brown, and at the same time it will release an attractive aroma. This reaction is called Maillard reaction. But generally speaking, the darker and heavier the food is after heating, the richer the aroma and the higher the acrylamide content.
