My favorite dish is seaweed egg soup, but why does seaweed turn green when cooked?

    Nori contains a special pigment protein called phycoerythrin. Phycoerythrin can be dissolved in water. Moreover, this kind of pigment protein is not stable, especially when it is heated, it is easily decomposed. Therefore, when the soup is cooked, the laver that loses phycoerythrin loses their original purple color and becomes green.
