    Generally sauerkraut and kimchi can be eaten with confidence, because inoculated fermented sauerkraut with pure acetic acid bacteria, or inoculated fermented kimchi with pure lactic acid bacteria, there is no problem of excessive nitrite, because these "good bacteria" do not produce sub Nitrate. Fresh ginger, fresh pepper, garlic, green onion, onion, perilla and other ingredients added in the pickle pickling can help reduce nitrite levels.
