I am a relatively economical person. I often eat overnight dishes. My friend said that eating regular overnight dishes can cause cancer. Why are there carcinogens in leftover food?

The cause of carcinogens in food overnight: because leftovers are prone to exceed nitrite. The longer the dish is stored after it is made, the more nitrite is produced. Although bacteria in food can be completely eliminated after heating, the toxins produced by bacteria cannot be eliminated.
