After the ethyl acetate extract of fish sauce is nitrosated, its N-nitroso compound content increases significantly, has mutagenicity and carcinogenicity, and can detect substances with direct genotoxicity. Studies by Fujian Medical University and Fujian Provincial Health and Epidemic Prevention Station have found that excessive consumption of fish sauce is one of the risk factors for high incidence of gastric cancer among people in Changle, Fujian.7
