Will vitamins and air oxidize

I like to cut fruit when I eat it, but my friends say that food exposed to the air is easily oxidized, so it is not nutritious. Is it true?

    The combination of many foods and air can lead to nutrient loss. Some vitamins are prone to oxidative reactions after exposure to oxygen, which can cause losses. Once many vegetables and fruits are cut or chopped and exposed to air, vitamin C is oxidized and destroyed.
