Smoky oil cooking?

I'm always worried that the oil is not cooked when cooking, so I will wait until the oil smokes before serving. Is this the right way to cook?

    When the oil temperature is right, the fried dishes are healthier. Don't wait for the oil to smoke before putting dishes, because when the oil starts to smoke, it means that the peroxidation reaction has started, unsaturated fatty acids are more likely to deteriorate and produce free radicals.
