Is thickening good when cooking?

When my mother cooks, she likes thickening. Is this way of cooking good for your health?

    Thickening is a very correct way of cooking. If you use starch to thicken the vegetables when cooking, and collect juice at the end of the stew, you can better retain the nutrients of the dishes. Basically all ingredients are suitable for thickening.
