How to fry the vegetarian dishes?

For example, when cooking spicy and bitter dishes, you can put a little less sugar because sugar has the effect of "harmony". This "harmony" can make the taste of peppers, bitter gourd and other dishes very soft, and there is a vagueness. About the taste of "sweet and spicy" and a touch of "sweet and bitter".

  Furthermore, when bitter melon is fried, it may not be good to boil the bitter taste with water, because the bitter taste comes from the bitter melon glycosides and cinchona in the bitter gourd.
